Isabelle's Mochi Donuts engaged Olive Tree Builds to deliver a complete restaurant buildout for their Union Station location in Toronto, including commercial kitchen installation, custom service counter fabrication, and brand-forward interior design execution.

The Challenge

Restaurant construction at Union Station — one of Canada's busiest transit hubs — requires coordination with Toronto Public Health, the TSSA for gas appliance connections, and strict compliance with Metrolinx construction management protocols. The commercial kitchen design needed to accommodate specific mochi donut production equipment.

Our Approach

Olive Tree Builds' food service construction experience meant we could anticipate every regulatory requirement from the outset. We coordinated directly with equipment vendors to ensure precise rough-in dimensions, and designed the service counter to optimize both customer flow and brand presentation within the transit hub environment.

The Outcome

Isabelle's Mochi Donuts opened on schedule to immediate strong customer demand at one of Toronto's highest-traffic locations. The custom service counter and brand-forward interior have become a key part of the brand's identity.
